Two-Bean and Rice Salad

3 C. cooked long-grain white rice
1 15 oz. can black beans, well-rinsed and drained
1 15 oz. can pinto beans, well-rinsed and drained
1 4 oz. can diced green chilies, drained
1/2 C. minced red onion
1/4 C. chopped cilantro
3 T. white wine vinegar
5 T. canola oil
1/4 tsp. salt (optional)

In a large bowl, combine rice, beans, chilies, onion and cilantro. Whisk together vinegar, oil, and salt. Pour over rice and mix gently. Serve at room temperature or chill. Makes 12 servings.
